Pumpkin/Fall Recipes

Pumpkin fall recipes

I don’t know about you, but I love the fall (on the warmer days). As soon as the weather gets that cool/crisp feel I start thinking about chili and pumpkin anything.  I also feel like my body slows down a little and for me that is a good thing.

Here are some great pumpkin recipes from some of the blogs that I follow and also a recipe for Pumpkin Breakfast Cookies that are not to sweet. I hope you try, and enjoy these pumpkin/fall recipes.

Pumpkin Breakfast Cookies

1/2 cup raw almond butter

1/2 cup pureed pumpkin

1/4 cup pure maple syrup or raw honey

1 or 2 eggs

1/2 tsp. vanilla

1/2 tsp. baking soda

1.5-2 tsp. pumpkin pie spice

1/4 tsp. salt

2-3 cups nuts, coconut, chocolate chips

Pre-heat oven to 350. Combine all ingredients in a large bowl. Drop by tbsp. onto a greased or baking sheet. Press down slightly. Bake for 12-15 minutes or until golden brown

I used coconut and raw pumpkin seeds. You can be creative and put in what you like.

Enjoy,

Sherry

Thanks Sherry! Great ideas for all of those pumpkins my kids seem to be getting from every school field trip or church activity they go on.

I love all things pumpkin! The recipe list sounds great. Can’t wait to check them out. The maple syrup in the cookie recipe sounds like the perfect way to add sweetener instead of sugar. Thanks for sharing.

Elaine, You are so right. At least maple sugar and honey have some nutrition.
