
I don’t know about you, but I love the fall (on the warmer days). As soon as the weather gets that cool/crisp feel I start thinking about chili and pumpkin anything. I also feel like my body slows down a little and for me that is a good thing.

Pumpkin Breakfast Cookies
1/2 cup raw almond butter
1/2 cup pureed pumpkin
1/4 cup pure maple syrup or raw honey
1 or 2 eggs
1/2 tsp. vanilla
1/2 tsp. baking soda
1.5-2 tsp. pumpkin pie spice
1/4 tsp. salt
2-3 cups nuts, coconut, chocolate chips
Pre-heat oven to 350. Combine all ingredients in a large bowl. Drop by tbsp. onto a greased or baking sheet. Press down slightly. Bake for 12-15 minutes or until golden brown
I used coconut and raw pumpkin seeds. You can be creative and put in what you like.
