These are truly the best healthy breakfast muffins ever! I put them together in 10 minutes and will eat them for the next couple of days.They are a quick and easy, out the door, healthy breakfast. This recipe can be made lots of ways. I will give you my recipe but be creative and make your own.
Best healthy breakfast muffins ever recipe

Make 12 muffins
Ingredients
2 eggs
2 egg whites
1 teaspoon vanilla
1 cup unsweetened applesauce
1 mashed banana
1 cup almond milk
1/4 cup honey or maple syrup
Mix all ingredients above in a large bowel.

Dry ingredients
2 cups organic oats
1 tablespoon cinnamon
1/4 cup chai seeds
1 teaspoon baking powder
1/4 cup coconut flakes
1/4 cup chopped almonds
1 1/2 scoops of Jay Robb protein powder
Mix all ingredients together and mix with the wet ingredients. Spray muffin tins with cooking spray. Divide mixture evenly into muffin tin cups.

Put fruit on the mixture in the muffin tins. I used blueberries, bananas, and strawberries. Use what ever fruit you like, mix it up. I pushed the fruit halfway in, so it would be half in and half on top the muffins.

Here they are! Yummy! I said I was going to eat two for breakfast but I also eat two as soon as they came out of the oven.


Preheat oven to 350 degrees. Bake 25 to 30 minutes or until a toothpick comes out clean.
You have to try these! Let me know if you put anything different in them. Other options might be raisins, walnuts, or dark chocolate chips.

I prefer not to use protein powder. What can I substitute? The muffins sound delicious!
Elain, I use protein powder to get more protein but you could use some type of meat like nitrate free bacon. I sometimes use Pamela’s gluten free pancake mix (it taste great and make them fluffy). You could use 1/4 cup of that or if you wanted more protein you could use Great Lakes Gelatin (great for bone health). Thanks for reading!
