I love this time of year for cooking outside. Beef Kabobs with Fried Cauliflower and Pineapple
For the skewers you will need
4 oz of (grass-fed) beef for each skewer
1 large onion
1/2 cup slice yellow summer squash
1/2 cup cherry tomatoes
1/2 cup cubed pineapple
For the fried cauliflower and Pineapple
Sauté 2 cups grated cauliflower and 1/2 cup cubed pineapple in 2 tablespoons of coconut oil
You can add spices and nuts to this dish if you want. I like cashews and ginger.
